Our shrimps are caught from two boats, the Jaana B and the Boy Bailey. They are cooked, on the boat, as soon as the nets are brought in. Each days catch is “picked” (peeled) by a team of expert “pickers” in a state of the art pickery situated close to the dock.

In days gone by “picking” was a cottage industry. The shrimps would be sent to peoples homes where the shelling was done on the kitchen table. The new health and hygiene laws mean that this is no longer possible. We are inspected on a regular basis to ensure that our pickery and potting operations fully comply to all health and safety standards.

Many of our shrimps are sold at this stage. However, over the last two or three years our “potted” shrimp has become more and more popular. This process involves re-cooking the shrimps in a secret blend of spices, with butter, and placing into pots which are then sealed with butter. These are then sold to many outlets throughout the UK.
